My notebooks are a strange mix: one page might track flavor profiles across a dozen hot sauces I've been testing side by side, and the next is a rough outline for an article breaking down why certain condiment trends take off while others quietly disappear. That back-and-forth between hands-on tasting and structured thinking is where my best work comes from. The testing keeps the analysis honest. The analysis keeps the tasting purposeful.
